Assemble sandwiches
Lay out 8 slices of bread on a clean surface. If using mayonnaise, spread about 1/2 tablespoon of mayo on one side of each of 4 slices (this goes on the inside or outside depending on preference); otherwise, use softened butter for the outside. Place one slice of cheese on each of those 4 slices. Add optional fillings now: a few thin tomato slices (about 2–3 per sandwich) or 1 strip of chopped bacon per sandwich. Top each with another slice of bread to form 4 sandwiches. If using mustard, spread the teaspoon across the cheese side of the bottom slices before adding optional fillings.
Butter the bread (for grilling)
If you spread mayo on the inside instead of butter, still lightly butter the outside of each sandwich: divide the 4 tablespoons of softened butter and spread about 1 tablespoon on the outside face of each sandwich (covering evenly). If you used mayo on the outside, reduce butter to 1/2 tablespoon per sandwich. Sprinkle a light pinch of salt and a tiny grind of black pepper on the inside cheese layer if desired (this is optional for kids).
Cook sandwiches
Place 1–2 sandwiches (do not overcrowd) in the skillet, buttered side down. Cook for 3–4 minutes on the first side until golden brown and crisp. Carefully flip with a spatula and cook the other side another 2–3 minutes, pressing lightly with the spatula to encourage even melting. If cheese is not fully melted after 5–6 minutes total, reduce heat to low, cover the skillet with a lid for 1–2 minutes to trap heat and finish melting.
Finish and serve
Transfer sandwiches to a cutting board. Let rest 1 minute, then slice each sandwich diagonally (or in half) for easier eating by kids. Serve warm. If making ahead, keep in a low oven (200°F / 90°C) on a rack set over a baking sheet for up to 15 minutes to maintain crispness.
