Combine dry ingredients
In a medium bowl whisk together 1 cup all-purpose flour, 1 tablespoon granulated sugar, and 1 teaspoon fine salt until evenly combined.
Whisk wet ingredients
In a separate bowl lightly beat 2 large eggs. Add 1 cup milk, 1 tablespoon water, 2 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract; whisk until blended.
Make a smooth batter
Gradually pour the wet mixture into the dry ingredients while whisking (or blend briefly with an immersion blender) until smooth and lump-free. The batter should be thin and pourable — if too thick, thin with up to 2 tablespoons additional milk, 1 tablespoon at a time.
Rest the batter
Cover the bowl and refrigerate for 20–30 minutes to relax the gluten and let air bubbles settle. This gives more tender crepes.
Cook Crepes
Cook first side: Cook 45–60 seconds until edges lift and the underside is lightly golden. If small bubbles form on top, that's normal.
Honey Lemon Sauce & Finish
Make the sauce: In a small saucepan over low heat combine 4 tablespoons honey, 2 tablespoons fresh lemon juice, 1 teaspoon lemon zest, and 1 tablespoon unsalted butter. Warm gently, stirring, until butter melts and honey loosens into a glossy sauce — do not boil. Taste and adjust: add more lemon juice for brightness or more honey for sweetness.
Finish and serve: Dust with 1 tablespoon powdered sugar if desired and garnish with additional lemon zest or fresh berries. Serve immediately while warm.
