marinated & seasoned cucumber with sesame seeds
Wash the cucumbers and slice them thinly using a mandoline or sharp knife. If desired, you can remove the seeds by cutting the cucumbers in half and scooping them out.
Place the cucumber slices in a bowl and sprinkle with salt. Toss to coat and let sit for about 15-20 minutes. This will help draw out excess moisture.
In a separate bowl, whisk together the rice vinegar, sugar, soy sauce, sesame oil, and chili flakes until the sugar is dissolved.
After the cucumbers have rested, rinse them under cold water to remove excess salt and drain well. Add the cucumbers to the dressing and toss gently to combine.
Transfer the cucumber salad to a serving dish and sprinkle with sesame seeds and chopped green onion. Serve chilled or at room temperature.
