    Wash and dry greens

    Place the spring mix in a salad spinner, rinse under cold water, spin dry thoroughly and transfer to a large mixing bowl. Pat any remaining damp spots with a clean kitchen towel or paper towel.

    Prepare vegetables

    Slice the English cucumber lengthwise, scoop seeds if desired, and cut into 1/4-inch half-moons to make approximately 1/2 cup. Halve the cherry tomatoes. Thinly slice the radishes into rounds. Thinly slice the red onion into half-moons, separate into rings and reserve 1/4 cup.

    Toast nuts

    Heat a small skillet over medium heat. Add the walnuts (or pecans) and toast, stirring frequently, until fragrant and lightly browned, about 3–4 minutes. Remove from pan to cool on a plate to stop cooking.

    Crumble cheese

    Measure and crumble the feta cheese and set aside at room temperature so it’s not too cold when served.

Make Herb Lemon Vinaigrette

    In a small bowl or jar, combine the fresh lemon juice, white wine vinegar, Dijon mustard, honey, minced garlic, chopped parsley and chopped chives. Whisk or shake until combined.

    Slowly drizzle in the extra-virgin olive oil while whisking (or pour in and shake the jar) to emulsify. Season with salt and black pepper. Taste and adjust: add up to 1 tsp more honey for sweetness or 1/2 tsp more salt if needed.

Assemble Salad

    Just before serving, add the prepared cucumber, cherry tomatoes, radish slices and red onion to the bowl with the dried spring mix. Add about two-thirds of the crumbled feta and half of the toasted nuts.

    Drizzle 3–4 tablespoons of the vinaigrette over the salad, then gently toss with tongs or salad servers until the leaves are evenly coated. Add more vinaigrette to taste (reserve any leftover dressing for another use).

    Transfer salad to a serving bowl or platter. Sprinkle the remaining feta and toasted nuts on top. Garnish with lemon zest and microgreens or extra chopped herbs if using.

    Serve immediately to preserve crispness. Leftover dressed salad is best eaten within a couple of hours; store any remaining dressing separately in the refrigerator for up to 5 days.
