Classic Deli Turkey Sandwich (makes 2)

Prep
Bring butter and mayonnaise to room temperature so they're easily spreadable. Wash and dry lettuce and slice the tomato into 1/4-inch rounds.

Assemble
Spread 1 tbs softened butter on the outside of each bread slice that will be grilled (optional) or leave plain for a cold sandwich. On the inside of two slices, spread 1 tbs mayonnaise evenly. Mix Dijon into the remaining mayonnaise or brush Dijon on one slice for extra kick.

Layer
On each sandwich bottom slice: place 4 oz (about half) of turkey (4 oz per sandwich), then 2 oz sliced cheddar (one slice per sandwich), two tomato slices, two lettuce leaves. Season tomato with a pinch (about 1/8 tsp) kosher salt and a grind (1/8 tsp) black pepper.

Finish
Top with the remaining bread slices, buttered side out if grilling. If grilling, heat a skillet over medium and cook sandwiches 2-3 minutes per side until golden and cheese begins to melt. If serving cold, simply cut sandwiches in half and serve with pickle spears and chips.

Prep
Slice ciabatta rolls horizontally. Thinly slice the cucumber and red onion. If roasted red peppers are jarred, drain and pat dry. Crumble the feta if needed.

Make quick dressing
In a small bowl, whisk together 1 tsp olive oil, 1/2 tsp lemon juice, 1/4 tsp dried oregano, 1/8 tsp salt and 1/8 tsp pepper. Toss this lightly with the sliced cucumbers and red onion to flavor them.

Assemble
Spread about 2 tbsp hummus on the bottom half of each ciabatta roll (approx 1 tbsp per sandwich). Layer 1/4 cup roasted red peppers, half the dressed cucumber and red onion mixture, crumbled feta (about 1.5 oz per sandwich), and 1/2 cup baby spinach divided between the two sandwiches.

Finish
Close sandwiches and press gently. If desired, toast in a skillet or panini press 2-3 minutes until warmed and slightly crisp. Cut each sandwich in half and serve with chips and pickle spears.
