Eggs & Seasoning

Optional Garnish

Method

Bacon

  1. 1

Preheat a skillet or nonstick frying pan over medium heat.

  2. 2

Add the 2 bacon strips in a single layer. Cook 3–5 minutes per side for regular bacon (adjust time for thickness) until crisped to your liking, turning once. If bacon splatters heavily, reduce heat to medium-low.

  3. 3

Transfer cooked bacon to a paper towel–lined plate to drain. Keep warm in a low oven (about 90–100°C / 200°F) if desired while finishing other components.

Eggs

  1. 4

If you prefer the eggs cooked in the bacon fat, spoon off all but about 1 teaspoon of fat from the pan used for bacon and return to medium-low. Otherwise use a clean nonstick pan and 1 tablespoon butter, heated over medium.

  2. 5

Crack the 2 eggs into a small bowl (or directly into the pan for fried). For scrambled: whisk eggs with salt and pepper until blended. For fried: leave whole and season with salt and pepper.

  3. 6

    Scrambled eggs

Pour whisked eggs into the heated buttered pan. Allow to set at the edges for 10–15 seconds, then gently stir with a spatula, folding from the edges to the center. Cook 1–2 minutes until soft curds form but eggs are still moist. Remove from heat just before fully set; carryover heat will finish them.

  4. 7

    Fried eggs

Cook eggs in the pan over medium heat until whites are set, about 2–3 minutes for sunny-side up. For over-easy/medium/ hard, cook an additional 15–45 seconds after flipping, depending on desired yolk firmness.

  5. 8

Taste and adjust seasoning. If using chives or parsley, sprinkle on the eggs just before serving.

Toast or Biscuit

  1. 9

If using bread: toast a slice to desired doneness in a toaster (about 2–3 minutes). Spread 1 tablespoon butter on the hot toast.

  2. 10

If using a biscuit: warm a store-bought or leftover biscuit in a 175°C/350°F oven for 5–8 minutes or microwave on high for 20–30 seconds, then split and spread with butter.

Fruit

  1. 11

Rinse and prepare 1 cup fresh fruit (halve berries, slice banana or apple, segment orange). Place in a small bowl.

  2. 12

If desired, drizzle up to 1 teaspoon honey or maple syrup and toss gently to coat.

Plating & Serving

  1. 13

Arrange the eggs, bacon strips, and toast or biscuit on a plate. Add the fruit in a small side bowl or on the plate.

  2. 14

Serve immediately while eggs and bacon are hot. Provide ketchup, hot sauce, or extra butter on the side if desired.
