Assemble
Lay the two bread slices on a clean surface. On one slice spread the mayonnaise evenly to the edges. On the other slice spread Dijon mustard evenly. Place 1 slice of cheese on the mustard-spread bread. Layer the 3 slices of ham evenly over the cheese, then top with the second slice of cheese. If using, add pickle slices and/or lettuce on top of the ham and cheese stack. Close the sandwich with the mayo-spread bread, mayo side down.

Prepare for cooking
If serving cold, cut the sandwich diagonally or in half and serve immediately. If you prefer a warm, melted sandwich, continue to the grilling step below.
Optional Hot Melt (pan/griddle method)

Heat a skillet or nonstick pan over medium-low to medium heat. While it heats, spread 1 tablespoon of butter evenly on the outer side of each bread slice (the sides that will contact the skillet).

Place the sandwich in the skillet, buttered side down. Spread the remaining tablespoon of butter on the top slice of bread (exposed side). To encourage even melting, after the sandwich has browned for about 1–2 minutes, carefully add 1 tablespoon of water to the hot pan away from the sandwich and immediately cover the pan with a lid for 30–45 seconds. The steam will help melt the cheese without burning the bread.

Remove the lid and continue cooking 1–2 more minutes until the bottom is golden-brown and crisp. Flip the sandwich gently and cook the second side 1–2 minutes until golden and the cheese is fully melted. Total cooking time should be 4–6 minutes depending on heat and pan.

Transfer the sandwich to a cutting board, rest 30 seconds, then slice and serve.
