    Prepare the Fries

    Peel and slice the potatoes into thin strips. Soak them in cold water for about 30 minutes to remove excess starch.

    Cook the Fries

    Heat oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and pat them dry. Fry the potatoes in batches until golden brown and crispy, about 3-4 minutes per batch. Remove from oil and drain on paper towels. Season with salt.

    Cook the Steak

    Preheat a grill or skillet over high heat. Season the NY Strip steaks with salt and black pepper on both sides. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

    Prepare Maitre d'hotel Butter

    In a small bowl, combine softened butter, chopped parsley, lemon juice, and a pinch of salt. Mix well and form into a log. Wrap in plastic wrap and refrigerate until firm.

    Serve

    Slice the rested steak against the grain. Plate with house-cut fries on the side, a slice of maitre d'hotel butter on top of the steak, and a serving of Blue Denim steak sauce.
