    Prepare the Rice

    Cook the jasmine rice according to package instructions. Once cooked, set aside.

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Chicken and Sausage

    Add the diced chicken and sliced andouille sausage to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.

    Stir in Garlic and Spices

    Add minced garlic, cayenne pepper, thyme, black pepper, and salt. Stir and cook for an additional 1-2 minutes.

    Add Liquids and Simmer

    Pour in the diced tomatoes and chicken broth. Add bay leaves and bring to a boil. Reduce heat and let it simmer for 30 minutes.

    Incorporate Shrimp and File

    Add the shrimp and file powder to the pot, cooking for an additional 5-7 minutes until the shrimp are pink and cooked through.

    Remove bay leaves and serve the gumbo over jasmine rice.
