Flatbread Preparation

Activate Yeast
In a bowl, mix warm water and yeast. Let it sit for about 5 minutes until frothy.

Make Dough
Add olive oil, salt, and flour to the yeast mixture. Stir until a dough forms.

Knead Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth.

Let Dough Rise
Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C).

Season Pork
Season the diced pork shoulder with cumin, chili powder, garlic powder, salt, and pepper.

Cook Pork
In a skillet over medium-high heat, cook the seasoned pork until browned and cooked through, about 10-15 minutes.

Add Pineapple
Add the diced pineapple to the skillet and cook for an additional 5 minutes until caramelized.

Prepare Flatbreads
Roll out the risen dough into flatbreads and place them on a baking sheet.

Assemble Flatbreads
Spread a layer of salsa verde over each flatbread, then top with the pork and pineapple mixture.

Add Toppings
Sprinkle cotija cheese over the top, and add pickled onions and jalapeño slices.

Bake in the preheated oven for about 12-15 minutes until the edges are crispy.
