Oysters & Prep
Remove oysters from refrigerator. Place on paper towels and gently pat each oyster dry to remove excess moisture. Allow to rest on a fresh layer of paper towel while preparing breading and oil. This helps the coating adhere and reduces oil splatter.
House Seasoning (dry blend)
Make seasoning blend
In a small bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, dried thyme, and cayenne pepper. Stir thoroughly until evenly mixed. Reserve about 1 teaspoon of this blend to stir into the breadcrumbs for extra flavor.
Breading Station
Set up stations
Arrange three shallow bowls or trays for breading: 1) flour and cornstarch combined; 2) egg wash (beat eggs with milk); 3) breadcrumbs mixed with the reserved 1 teaspoon house seasoning. Season the flour mixture lightly with 1/2 teaspoon of the house seasoning blend and whisk to combine.
Dredge oysters
Working in batches of 6–8 oysters (do not overcrowd), lightly dredge each oyster in the flour mixture, shaking off excess. Dip into the egg wash, letting excess drip back into the bowl, then press into the seasoned breadcrumbs to coat completely. Place breaded oysters on a tray and let rest 5 minutes so the coating sets.
Frying
Heat oil
Pour oil into a deep skillet or heavy-bottomed pot to a depth of about 1½ to 2 inches (approximately 4 cups). Heat over medium-high until the oil reaches 350°F (175°C). If you do not have a thermometer, test by dropping a small piece of bread or a pinch of breadcrumb into the oil — it should sizzle and brown in about 45–60 seconds.
Fry oysters
Carefully add breaded oysters in a single layer (6–8 at a time depending on pan size) and fry, turning once, until golden brown and crisp, about 2 to 3 minutes total per batch. Maintain oil temperature near 350°F — if it drops, give the oil time to return to temperature between batches. Use a slotted spoon or spider to transfer oysters to a wire rack set over a baking sheet to drain; avoid stacking to keep them crisp.
Finish and season
While still hot, lightly sprinkle oysters with flaky sea salt if using. Let rest 1–2 minutes on the rack; the interior will be hot and juicy.
