Creole Oysters Recipe

Method
Prepare oysters
Inspect & season
If oysters are not already shucked on the half shell, carefully shuck them and place each oyster in its half shell on a tray. Sprinkle each oyster lightly with kosher salt and 1/16 to 1/8 tsp freshly ground black pepper (divide the 0.25 tsp across the six oysters). Keep chilled until ready to top.
Make Creole tomato & garlic sauce
Heat a small skillet over medium heat. Add the unsalted butter and olive oil and warm until the butter is melted and begins to shimmer, about 1 minute.
Add the finely minced onion, celery, and green pepper. Sweat gently over medium-low heat until softened and translucent, about 6–8 minutes, stirring occasionally to prevent browning.
Add the minced garlic and cook 30–45 seconds until fragrant, stirring constantly to avoid burning.
Stir in the tomato paste and cook 1 minute to caramelize slightly, then add the crushed tomatoes. Reduce heat to low and simmer gently for 3–4 minutes to meld flavors.
Stir in hot sauce, Worcestershire, creole seasoning, lemon juice, sugar (if using), and the remaining 1/8 tsp black pepper. Simmer another 1–2 minutes. Taste and adjust seasoning — add a pinch more creole seasoning or hot sauce if you prefer more heat.
Remove from heat and stir in chopped parsley. The sauce should be thick but spoonable. If it's too runny, simmer 1–2 minutes longer to reduce.
Assemble & chargrill
Spoon about 1 to 1 1/2 tablespoons of the warm Creole tomato & garlic sauce evenly over each oyster, taking care not to overwhelm the oyster liquor. If using cheese for a gratin finish, sprinkle about 1/3 teaspoon (total ~2 tbs across six oysters) of grated Parmesan over each topped oyster.
Place oysters directly on the hot grill grate (use an oven-safe sheet of rock salt or a grill-safe pan to stabilize shells if needed) or put the tray under the broiler about 4–6 inches from the heat source. Grill or broil until sauce is bubbling, edges of oysters begin to sizzle and cheese (if used) is lightly browned, about 3–5 minutes. Watch closely to avoid overcooking—oysters should remain plump and tender.
If you prefer a more pronounced char, move oysters closer to the heat for an additional 30–60 seconds, rotating as needed for even coloring.
Finish & serve
Remove oysters from the grill or broiler using tongs or a spatula and transfer to a heatproof serving plate. Garnish each oyster with a small sprinkle of chopped chives or green onions and a light dusting of additional parsley if desired.
Serve immediately with lemon wedges on the side for squeezing over the oysters.
