Croutons
Prepare the Bread
Preheat your oven to 375°F (190°C). Cut the French bread into bite-sized cubes.
Season the Croutons
In a large bowl, toss the bread cubes with olive oil, Parmesan cheese, garlic powder, salt, and black pepper until evenly coated.
Bake the Croutons
Spread the seasoned bread cubes on a baking sheet in a single layer. Bake for 15-20 minutes, or until golden brown and crispy, stirring halfway through.

In a blender or food processor, combine bonito flakes, anchovy paste, garlic cloves, lemon juice, Dijon mustard, olive oil, salt, and black pepper.
Blend Until Smooth
Blend the mixture until smooth and creamy. Taste and adjust seasoning if necessary.
Salad
Prepare the Kale
Wash the Tuscan kale and remove the stems. Tear the leaves into bite-sized pieces.
Assemble the Salad
In a large bowl, combine the torn kale, Parmesan cheese, and lemon zest. Drizzle with the prepared dressing and toss to coat evenly.
