Steak Preparation

    Season the Ribeye

    Sprinkle the Texas Wagyu ribeye with salt and black pepper on both sides evenly.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the ribeye and sear for 4-5 minutes on each side for medium-rare, or longer if desired. Remove from heat and let rest for 5 minutes.

Twice Baked Potato Preparation

    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Pierce each potato several times with a fork. Bake directly on the oven rack for 45-60 minutes, until tender.

    Prepare the Filling

    Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out the insides into a mixing bowl, leaving a thin layer of potato in the skins.

    Mix Ingredients

    To the bowl of potato flesh, add butter, sour cream, shredded cheddar cheese, and chopped green onions. Mix until well combined and creamy.

    Refill and Bake Again

    Spoon the potato mixture back into the potato skins. Place them on a baking sheet and return to the oven for another 15-20 minutes until heated through and golden on top.

    Prepare Sauces

    Choose your preferred sauce (Bordelaise, Bearnaise, or Horseradish Cream) and heat it gently in a small saucepan, if necessary, or serve at room temperature.
