Steak Tartare
Method
Steak Tartare
- 1
Prepare the Ingredients
Start by finely chopping the beef tenderloin with a sharp knife. The pieces should be small enough to be easily mixed and eaten raw.
- 2
Mix the Base
In a mixing bowl, combine the finely chopped beef with the minced anchovy fillets, chopped capers, diced pickled peppers, and sorghum syrup. Mix well to ensure the flavors are evenly distributed.
- 3
Add Flavorings
In the same bowl, add the Dijon mustard, egg yolk, and olive oil. Season with salt and freshly ground black pepper to taste. Mix thoroughly until the mixture is well combined and creamy.
- 4
Finish with Herbs
Fold in the chopped fresh parsley for added flavor and color.
- 5
Serve
Transfer the steak tartare mixture onto a serving plate. Serve immediately with toasted bread or crackers on the side.
