Pasta Preparation

    Cook the Spaghetti

    In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water before draining.

    Prepare the Mussels

    While the pasta cooks, rinse the mussels under cold water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

    Cook the Mussels

    In a large skillet, add olive oil over medium heat. Once hot, add the mussels and cover. Cook for about 5-7 minutes, shaking the skillet occasionally until the mussels open. Discard any mussels that remain closed.

    Add Sea Urchin

    Once the mussels are cooked, gently stir in the sea urchin and cook for an additional 1-2 minutes until warmed through.

Flavoring and Assembly

    Prepare Garlic Chips

    Thinly slice the garlic cloves. In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the garlic slices and cook until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

    Combine Ingredients

    In a large bowl, combine the drained spaghetti, mussels, and sea urchin mixture. If the pasta seems dry, add a little reserved pasta water. Stir in the red pepper flakes, parsley, and season with black pepper to taste.

    Serve

    Plate the spaghetti and top with crispy garlic chips. Drizzle with any remaining olive oil from the skillet. Garnish with additional parsley if desired.
