Preparation of Seafood

Prepare the Oysters
Shuck the fresh oysters carefully, ensuring to keep the juice in the shell. Place them on a serving platter on ice.

Cook the Shrimp
Boil a pot of salted water. Add the large shrimp and cook for 2-3 minutes until they turn pink. Remove from water and chill in ice water. Once cooled, peel and devein the shrimp.

Prepare the Salmon Crudo
Thinly slice the fresh salmon fillet. Arrange the slices neatly on a separate plate.

Arrange the Smoked Salmon
Cut the smoked salmon into bite-sized pieces and arrange them on the same platter as the oysters.

Prepare the Octopus
If using pre-cooked octopus, slice it into thin rounds. If cooking raw octopus, boil it in salted water for 45 minutes until tender, then cool and slice. Arrange on the platter.
Garnishing and Serving

Prepare the Garnishes
Cut the lemon into wedges and place them around the seafood. Chop fresh dill and scatter it over the seafood for flavor and presentation.

Serve with Sauces
Place the cocktail sauce and mignonette sauce in small bowls on the platter. Ensure the seafood is served chilled on a bed of ice.
