Preparation Steps

    Prepare the Pork Chops

    Season the pork chops with salt and black pepper on both sides. Let them sit at room temperature for about 15 minutes.

    Sauté the Mushrooms

    In a skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the hedgehog mushrooms and sauté for about 5-7 minutes, or until they are golden brown and tender. Set aside.

    Cook the Pork Chops

    In the same skillet, add another tablespoon of olive oil and butter. Once hot, add the pork chops and cook for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from the skillet and let them rest.

    Prepare the Sauce

    In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add the sautéed mushrooms back into the skillet along with the fresh tarragon. Stir to combine and cook for an additional 2 minutes.

    Serve

    Place the pork chops on plates and spoon the mushroom and tarragon sauce over the top. Serve immediately.
