Make the Pasta Dough
In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually incorporate the flour into the eggs using a fork or your fingers until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Prepare the Filling
In a skillet, heat the olive oil over medium heat. Add the finely chopped red onion and sauté until translucent, about 5 minutes. Add the smoked short rib, figs, salt, and black pepper. Cook for another 5 minutes, stirring occasionally, until heated through. Remove from heat and let cool slightly.

Mix in the Cheese
Once the filling mixture has cooled, crumble in the blue cheese and mix until well combined. Set aside.

Roll Out the Dough
After the dough has rested, divide it into four pieces. Roll out one piece at a time on a floured surface or using a pasta machine, until thin (about 1/16-inch thick).

Fill the Ravioli
Cut the rolled-out dough into squares (about 3 inches). Place a teaspoon of filling in the center of each square. Moisten the edges with water, fold over to form a triangle, and press to seal. Ensure there are no air pockets.

Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli to the boiling water and cook for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and drain.

Serve the ravioli warm with a drizzle of olive oil or your favorite sauce. Enjoy!
