Prepare the Ingredients

Chop the bacon into small pieces and dice the poblano pepper.

Cook the Bacon

In a medium skillet, cook the bacon over medium heat until crispy. Remove the bacon and drain on a paper towel, leaving about 1 tablespoon of bacon fat in the skillet.

Sauté the Poblano

In the same skillet, add the diced poblano pepper and sauté over medium heat for about 3-4 minutes, or until softened. Remove from heat and set aside.

Whisk Eggs

In a bowl, crack the eggs and add the milk, salt, and black pepper. Whisk together until fully combined and slightly frothy.

Cook the Omelette

In the same skillet, melt the butter over medium heat. Once melted, pour in the egg mixture and let it cook undisturbed for about 2 minutes.

Add Fillings

Once the edges start to set, add the cooked bacon, sautéed poblano, and cheddar cheese to one side of the omelette.

Fold and Finish

Carefully fold the other side of the omelette over the fillings. Cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.

Serve

Slide the omelette onto a plate, cut in half if desired, and serve warm.
