Seafood and Broth

Method

Preparation and Cooking

  1. 1

    Prepare the Seafood

Rinse the red grouper fillets and cut them into bite-sized pieces. Set aside. Rinse the crab legs and shrimp, ensuring that the shrimp are peeled and deveined.

  2. 2

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing until they are soft, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

  3. 3

    Add Tomatoes and Broth

Stir in the canned diced tomatoes, fish stock or clam juice, and white wine. Add the bay leaves, salt, black pepper, and red pepper flakes. Bring the mixture to a simmer.

  4. 4

    Cook the Seafood

Once the broth is simmering, add the red grouper pieces, crab legs, and shrimp. Cover the pot and let it cook for about 10-15 minutes, until the seafood is cooked through and the shrimp are pink and opaque.

  5. 5

    Finish and Serve

Remove the bay leaves from the pot. Stir in the chopped parsley and adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with more parsley if desired.
