Method

Preparation

  1. 1

    Prepare the Squash

Preheat your oven to 400°F (200°C). Cut the winter squash in half, scoop out the seeds, and slice it into 1-inch cubes. Place the cubes in a bowl.

  2. 2

    Season the Squash

Drizzle the olive oil over the squash cubes. Sprinkle with salt, black pepper, cumin, paprika, and garlic powder. Toss to coat evenly.

  3. 3

    Roast the Squash

Spread the seasoned squash cubes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes until tender and caramelized, stirring halfway through.

Cooking the Chicken

  1. 4

    Prepare the Chicken

While the squash is roasting, season the chicken breasts with salt, black pepper, and a little cumin and paprika for extra flavor.

  2. 5

    Cook the Chicken

Heat a skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through and the internal temperature reaches 165°F (75°C).

Serving

  1. 6

    Plate the Dish

Once the chicken is cooked and the squash is roasted, slice the chicken breasts and arrange them on a plate. Add a generous portion of roasted squash beside the chicken.

  2. 7

    Add Condiments

Drizzle the chili condiment over the chicken and top with a dollop of plain yogurt for creaminess and tang.

  3. 8

    Garnish and Serve

Garnish with fresh herbs if desired (like cilantro or parsley) and serve immediately. Enjoy your flavorful chicken dish!
