Preparation

1. Prepare the Turkey

Trim any excess fat from the turkey breast and cut it into bacon-style strips, roughly 1/4 inch thick.

2. Mix the Cure

In a bowl, combine curing salt, brown sugar, black pepper, paprika, garlic powder, and onion powder. Mix well.

3. Coat the Turkey

Rub the curing mixture thoroughly over the turkey strips, ensuring an even coating. Place the coated turkey in a resealable plastic bag.

4. Add Flavor

Pour liquid smoke and apple cider vinegar into the bag with the turkey strips. Seal the bag, removing as much air as possible, and massage the marinade into the turkey.

5. Refrigerate

Place the bag in the refrigerator and let it cure for at least 24 hours, up to 3 days for stronger flavor.

6. Prepare the Smoker

Soak hickory wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C).

7. Smoke the Turkey

Remove the turkey strips from the marinade and pat them dry with paper towels. Place the turkey strips on the smoker racks and sprinkle some soaked wood chips on the heat source.

8. Monitor Smoking Time

Smoke the turkey for about 2-3 hours, or until the internal temperature reaches 165°F (74°C).

9. Cool Down

Once cooked, remove the turkey bacon from the smoker and let it cool completely on a wire rack.
