Short Ribs Preparation

Season the Ribs
Pat the beef short ribs dry with paper towels. Season generously with salt and black pepper.

Sear the Ribs
In a large heavy-bottomed pot, heat olive oil over medium-high heat. Add the short ribs in batches, searing each side for about 3-4 minutes until browned. Remove and set aside.

Add Remaining Ingredients
Return the seared short ribs to the pot. Add beef broth, dried thyme, and dried rosemary. Bring to a boil.

Slow Braise
Cover the pot, reduce the heat to low, and let simmer for 2.5 to 3 hours, until the meat is tender and easily pulls apart.

Cool and Cut
Remove the pot from heat and let the short ribs cool slightly. Once cool enough to handle, remove the meat from the bones and cut into bite-sized pieces.

Sear for Caramelization
In a skillet over medium-high heat, sear the cut short rib pieces for about 2-3 minutes until caramelized on the outside.

Combine Ingredients
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, sriracha sauce, and minced garlic until well combined.

Adjust to Taste
Taste the sauce and adjust seasoning or sweetness with additional honey or sriracha, if desired.
