Preparation
- 1
Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Vegetables
While the pasta cooks, wash and chop the bell peppers, zucchini, cherry tomatoes, carrots, and broccoli into bite-sized pieces.
Cooking
- 3
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped vegetables and sauté for about 5-7 minutes, stirring occasionally, until they are tender but still crisp.
- 4
Add the Sauce
Pour in the vegetable broth and season with salt and black pepper. Let it simmer for another 3-5 minutes, allowing the flavors to meld.
- 5
Combine Pasta and Vegetables
Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together gently to combine and heat through.
- 6
Finish with Cheese and Basil
Once well combined, remove from heat and sprinkle with grated Parmesan cheese and chopped fresh basil. Toss lightly to distribute.
