Preparation

  1. 1

    Slice the Ribeye

Thinly slice the ribeye steak against the grain to ensure tenderness.

  2. 2

    Season the Meat

In a bowl, mix the sliced ribeye with salt, black pepper, and garlic powder. Let it marinate for 15 minutes.

Cooking

  1. 3

    Cook the Ribeye

Heat a skillet over medium-high heat. Add the marinated ribeye slices and cook for about 5-7 minutes until browned and cooked to your liking.

  2. 4

    Melt the Cheese

Once the ribeye is cooked, reduce heat to low. Place aged American cheese slices over the meat and cover the skillet to melt the cheese, about 2-3 minutes.

Assembly

  1. 5

    Prepare the Rolls

While the cheese is melting, slice the mini sub rolls open lengthwise without cutting all the way through.

  2. 6

    Spread the Mayo

Spread house mayo inside each mini sub roll generously.

  3. 7

    Fill the Rolls

Using a spatula, fill each roll with the cheesesteak mixture and top with relish red hots.

  4. 8

    Serve

Serve the mini cheesesteak subs warm with extra relish on the side.
