Prepare the yeast
In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make the dough
In a large mixing bowl, combine flour and salt. Add the frothy yeast mixture and olive oil. Mix until it forms a dough.

Knead the dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let it rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the lobster
Remove the lobster meat from the shell and cut it into bite-sized pieces.

Bread the lobster
Dip each piece of lobster into the flour, then the egg, and finally coat with breadcrumbs.

Fry the lobster
Heat oil in a frying pan over medium heat. Fry the lobster pieces for about 3-4 minutes until golden brown and cooked through. Drain on paper towels.
Assembling the Pizza

Preheat the oven
Preheat your oven to 475°F (245°C).

Roll out the dough
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.

Top the pizza
Spread black garlic scampi butter evenly over the rolled-out dough. Add slices of fresh mozzarella, followed by the fried lobster pieces, and sprinkle parmesan cheese over the top.

Bake the pizza
Transfer the pizza to a baking sheet or pizza stone. Bake for 10-12 minutes or until the crust is golden and cheese is bubbling.

Remove the pizza from the oven and sprinkle with fresh parsley before slicing and serving.
