Method
Preparation of Marinade
- 1
Mix the Marinade
In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, black pepper, and red pepper flakes. Stir until the sugar is dissolved and all ingredients are well mixed.
Marinating the Meat
- 2
Marinate the Meat
Place the beef short ribs and pork belly in a large zip-lock bag or a shallow dish. Pour the marinade over the meat, ensuring that all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Cooking
- 3
Grill the Meat
Preheat your grill to medium-high heat. Remove the meat from the marinade, allowing excess marinade to drip off. Grill the beef short ribs for about 4-5 minutes on each side, or until desired doneness. Grill the pork belly for about 3-4 minutes per side, until crispy and cooked through.
Serving
- 4
Prepare the Side Dishes
While the meat is grilling, prepare the side dishes. Serve cooked rice, kimchi, and fresh lettuce leaves in separate bowls. Sprinkle sesame seeds on top of the rice for added flavor.
- 5
Serve the Meal
Once the meat is cooked, slice it into bite-sized pieces. Serve the grilled meat with the cooked rice, kimchi, and lettuce leaves, allowing guests to wrap the meat in lettuce with rice and kimchi if they wish.
