Prepare the Crab Mixture
In a large mixing bowl, gently combine the jumbo lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, lemon juice, green onions, parsley, beaten egg, breadcrumbs, salt, and black pepper. Be careful not to break up the crab meat too much.

Cover the bowl with plastic wrap and refrigerate the crab mixture for at least 30 minutes to allow the flavors to meld and for the mixture to firm up.

Once the mixture has chilled, remove it from the refrigerator. With your hands, gently form the mixture into large patties, about 4 inches in diameter and 1 inch thick. You should get about 6-8 patties.

In a large skillet, heat the olive oil and butter over medium heat. Once hot, add the crab cakes to the skillet, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side until golden brown and crispy.
