Preparing Chicken Wingettes

    Marinate the Wingettes

    In a large bowl, combine chicken wingettes, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well to ensure the wingettes are evenly coated in the seasoning. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Flour Coating

    In a separate bowl, add the all-purpose flour. This will be used to coat the marinated wingettes before frying.

    Heat the Oil

    In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accurate temperature.

    Coat and Fry the Wingettes

    Remove the marinated wingettes from the refrigerator. Dredge each wingette in the flour, shaking off any excess. Carefully place them in the hot oil, working in batches to avoid overcrowding. Fry for about 8-10 minutes or until golden brown and cooked through. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

    Cut the Potatoes

    Peel the russet potatoes and cut them into fries, about 1/4 inch thick.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    Fry the Fries

    In the same pot with hot oil, carefully add the dried fries in batches. Fry for about 4-6 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them and place on a paper towel-lined plate. Immediately season with salt to taste.

Serving Sauces

    Prepare the Dipping Sauces

    In small bowls, serve ketchup, hot sauce, and mambo sauce for dipping alongside the fried chicken wingettes and pomme frites.
