Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This helps to remove excess moisture.

Mix the Coating
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well until all dry ingredients are combined.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring each ring is well coated. Shake off any excess flour.

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Mix well.

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally to prevent sticking.
