For the Battered Fish

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold sparkling water until you achieve a smooth batter consistency. Let it rest for about 15 minutes.

Heat the Oil
In a deep frying pan or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Fish
Dip each fish fillet into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Potatoes
Peel the large potatoes and cut them into thick strips. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a separate pot, heat the vegetable oil over medium-high heat to 350°F (175°C).

Fry the Chips
Drain and pat dry the soaked potato strips. Fry them in the hot oil in batches for about 5-6 minutes until they are golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

Mix the Ingredients
In a small bowl, combine the mayonnaise, finely chopped pickles, capers, lemon juice, and fresh dill. Stir well to combine and refrigerate until ready to serve.
