Prepare the Liquid
In a medium saucepan, bring 4 cups of water to a boil over high heat.

Add Cornmeal
Once the water is boiling, add 1 cup of cornmeal and 1 tsp of salt. Stir continuously to prevent lumps.

Simmer the Grits
Reduce heat to low and cook the grits for about 20-25 minutes, stirring frequently until thickened.

Finish with Butter
Remove from heat and stir in 2 tbs of butter and shredded cheese if using, mixing until melted and smooth.

Prepare the Trout
Pat the trout fillets dry with paper towels. Season both sides with salt, pepper, paprika, and garlic powder.

Dredge in Flour
Place 1 cup of all-purpose flour on a plate. Dredge each seasoned trout fillet in flour, shaking off excess.

Heat the Oil
In a large skillet, heat 1 cup of vegetable oil over medium-high heat until shimmering.

Fry the Trout
Carefully place the floured trout fillets in the hot oil. Fry for about 4-5 minutes on each side until golden brown and crispy.

Once cooked, transfer the trout to a paper towel-lined plate to drain excess oil.

Spoon the creamy grits onto a plate, creating a bed for the trout.
