Prepare the Crab Mixture
In a large bowl, combine the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, chopped green onions, bread crumbs, beaten egg, salt, and black pepper.

Form the Fritters
Gently mix until all ingredients are well combined. Using your hands, form the mixture into small patties, about 2 inches in diameter.

Chill the Fritters
Place the formed fritters onto a plate, cover with plastic wrap, and refrigerate for at least 30 minutes to help them hold their shape.

Fry the Fritters
In a large skillet, heat oil over medium heat. Once hot, carefully add the fritters, cooking in batches if necessary. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

Drain and Serve
Once cooked, remove the fritters from the skillet and place them on paper towels to drain excess oil. Serve warm.

Mix the Spices
In a small bowl, combine paprika, celery salt, black pepper, cayenne pepper, dried mustard, ground nutmeg, ground allspice, and salt. Stir well to distribute the spices evenly.
