Method
Biscuits
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 2
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
- 3
Cut in Butter
Add the unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
- 4
Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined. Do not overmix.
- 5
Shape the Dough
Turn the dough out onto a floured surface and gently knead it 3-4 times until it holds together. Pat it into a 1-inch thick rectangle.
- 6
Cut Biscuits
Using a biscuit cutter or a glass, cut out biscuits and place them on a baking sheet lined with parchment paper.
- 7
Bake
Bake in the preheated oven for 12-15 minutes or until the tops are golden brown.
- 8
Cool
Remove from the oven and let cool slightly before serving.
Honey Butter
- 9
Prepare Honey Butter
In a medium bowl, combine the unsalted butter, honey, and a pinch of salt. Using a hand mixer or a whisk, beat until light and fluffy.
- 10
Serve
Transfer the honey butter to a serving dish and set aside for serving with biscuits.
Powdered Sugar
- 11
Prepare Powdered Sugar
Sift the powdered sugar into a small bowl and set aside for serving with biscuits.
Seasonal House-Made Jam
- 12
Prepare Fruit
In a saucepan, combine the fresh fruit, granulated sugar, and lemon juice.
- 13
Cook the Jam
Cook over medium heat, stirring frequently, until the fruit breaks down and the mixture thickens, about 15-20 minutes.
- 14
Cool and Serve
Remove from heat and let cool. Transfer to a jar and serve with biscuits.
