Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Set over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Beat Eggs and Sugar
In a separate bowl, whisk the eggs and granulated sugar together until pale and thick. This should take about 5 minutes using a hand mixer or stand mixer on medium speed.

Combine Mixtures
Slowly add the melted chocolate mixture to the egg mixture while continuously whisking to prevent the eggs from cooking. Add in vanilla extract and salt, and mix until well combined.

Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip on medium-high speed until soft peaks form, about 3-5 minutes.

Top the Mousse
Once the mousse has set, remove it from the refrigerator. Spoon or pipe the whipped cream on top of each mousse serving.
