Cake Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 220°C (425°F). This ensures that the cakes rise properly.

  2. 2

    Prepare the Ramekins

Grease four ramekins with butter and lightly dust them with flour. Tap out any excess flour and set aside.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a heatproof bowl, combine dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth. Stir until fully combined.

  2. 4

    Mix Sugar and Eggs

In a separate bowl, whisk together the sugar and eggs until the mixture is pale and slightly thickened.

  3. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg and sugar mixture. Stir gently until incorporated.

  4. 6

    Add Dry Ingredients

Sift in the flour and add a pinch of salt. Fold gently until just combined, being careful not to overmix.

  5. 7

    Add Vanilla

Stir in the vanilla extract until evenly distributed in the batter.

Baking and Serving

  1. 8

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 9

    Bake the Cakes

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 10

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate and let it sit for a few seconds before lifting the ramekin off. Serve immediately, optionally with ice cream or whipped cream.
