    Prepare the Potatoes

    Wash and peel the potatoes. Slice them thinly using a mandoline or a sharp knife, aiming for about 1/8 inch thickness.

    Soak the Potato Slices

    Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the soaked potato slices and lay them out on a clean kitchen towel or paper towels. Pat them dry to remove moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the right temperature.

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-4 minutes.
