Core and finely chop the Granny Smith apple. You can leave the skin on for added texture.

In a large mixing bowl, combine the ground chicken, chopped apple, salt, black pepper, sage, thyme, garlic powder, and onion powder. Mix well until all ingredients are evenly distributed.

If using natural casings, rinse them thoroughly and stuff the sausage mixture into the casings, twisting them into links. If not using casings, simply form the mixture into patties.
