    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

    Dip the Bread

    Heat a skillet or griddle over medium heat and add the butter. Once melted, take each slice of challah bread and dip it into the egg mixture, ensuring both sides are coated.

    Cook the French Toast

    Place the dipped challah slices onto the skillet and cook for about 3-4 minutes on each side, or until golden brown. Repeat with remaining slices, adding more butter as needed.

    Prepare the Anglaise Base

    In a heatproof bowl, whisk together the egg yolks and granulated sugar until pale and slightly thickened.

    Heat the Milk

    In a saucepan, heat the milk over medium heat until it just begins to simmer. Remove from heat.

    Combine and Cook

    Gradually pour the hot milk into the egg yolk mixture, whisking continuously to prevent curdling. Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened and it coats the back of a spoon.

    Finish the Anglaise

    Remove from heat and stir in the vanilla extract and maple syrup. Allow to cool slightly before serving.
