For the Blackened Catfish

    Prepare the Catfish

    Pat the catfish fillets dry with paper towels. Coat both sides with cajun seasoning, pressing it into the fish to adhere.

    Cook the Catfish

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the catfish fillets. Cook for 3-4 minutes on each side, or until blackened and cooked through. Serve with lemon wedges.

For the Dirty Rice

    Sauté the Vegetables

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add chopped onion, green bell pepper, and celery. Sauté for 5-7 minutes until softened.

    Brown the Meat

    Add ground beef to the pot and cook until browned, about 5-6 minutes. Drain excess fat if necessary.

    Add Rice and Broth

    Stir in the rice, cajun seasoning, garlic, black pepper, and chicken broth. Bring to a boil, then reduce heat to low.

    Cook the Rice

    Cover and simmer for 20 minutes, or until the rice is tender and liquid is absorbed. Fluff with a fork and season with salt to taste.

For the Collard Greens

    Sauté the Onions and Garlic

    In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté for 3-4 minutes until fragrant.

    Cook the Collard Greens

    Add the chopped collard greens and chicken broth to the pot. Stir in red pepper flakes and salt to taste.

    Simmer

    Cover and simmer for 30-40 minutes, or until greens are tender. Adjust seasoning if necessary.
