Tomahawk Steak Preparation

    Season the Steak

    Generously season the Creekstone Farms Tomahawk Steak with kosher salt and black pepper on both sides. Allow it to sit at room temperature for 30 minutes before cooking to ensure even cooking.

    Heat the Grill or Pan

    Preheat your grill or a cast-iron skillet over high heat. Add olive oil to the skillet or brush it on the grill grates.

    Sear the Steak

    Sear the steak for about 5-6 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

Garlic Butter Pomme Frites

    Prepare the Potatoes

    Peel and cut the Russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot to 350°F. Drain the potatoes and pat them dry. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch.

    Make Garlic Butter

    In a small saucepan, melt the unsalted butter over low heat. Add minced garlic cloves and cook until fragrant, about 2 minutes. Remove from heat and stir in fresh parsley and sea salt.

    Toss Pomme Frites

    Once the fries are done, toss them immediately in the garlic butter mixture and serve hot.

Charred Broccolini

    Prepare the Broccolini

    Rinse the broccolini and trim the ends. Toss with olive oil, salt, and lemon zest.

    Char the Broccolini

    On a hot grill or in a skillet, char the broccolini for about 3-4 minutes until tender and slightly blistered. Remove from heat.

Merlot Steak Sauce Reduction

    Sauté Shallots

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add chopped shallots and sauté until translucent, about 2 minutes.

    Deglaze the Pan

    Pour in the Merlot wine and beef broth, scraping the bottom of the pan to release any flavorful bits. Bring to a boil.

    Reduce the Sauce

    Lower the heat and let the sauce simmer until it thickens, about 10-15 minutes. Adjust seasoning as needed.
