    Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper. Position a rack in the middle of the oven.

    Wash and dry the sweet potatoes thoroughly. Leave the skin on for texture and nutrients. Cut into uniform fries about 1/4–1/2 inch thick so they cook evenly. Aim for roughly 2 cups of cut fries total.

    Place the cut fries in a bowl of cold water and soak for 20–30 minutes to remove excess starch (this increases crispness). If short on time, a 10-minute soak still helps.

    Dry and toss with cornstarch

    Drain the fries and spread them out on a clean kitchen towel or paper towels. Pat thoroughly dry. Transfer to a large bowl and sprinkle the cornstarch over them. Toss until the fries have a thin, even coating of cornstarch.

    Add the olive oil, paprika, garlic powder, 3/4 teaspoon salt, and the black pepper to the bowl. Toss well so each fry is lightly coated with oil and seasonings. (Reserve the remaining 2.25 tsp salt to finish after baking; this helps control overall saltiness.)

    Arrange on baking sheet

    Spread the fries on the prepared baking sheet in a single layer with space between pieces. Crowding will cause steaming and soggy fries. Use two baking sheets if necessary.

    Bake at 425°F (220°C) for 15 minutes. After 15 minutes, remove the sheet, flip each fry with a spatula to promote even browning, then return to the oven and bake another 10–15 minutes until edges are crisp and centers are tender. Total bake time typically 25–30 minutes depending on thickness.

    Broil for extra crisp (optional)

    If you want extra crispness, switch oven to broil on high for 1–2 minutes at the end, watching closely to avoid burning. Remove immediately when edges brown.

Optional Dipping Sauce
