Make the ranch
In a small bowl, whisk together 2 tbsp mayonnaise, 2 tbsp buttermilk and 1 tbsp sour cream until smooth. Stir in 1 tsp finely chopped chives, 1/4 tsp dried dill, 1/8 tsp garlic powder, 1/8 tsp onion powder, 1/8 tsp salt and a pinch (about 1/16 tsp) of freshly ground black pepper. Taste and adjust seasoning or consistency with an extra teaspoon of buttermilk if needed. Transfer to a squeeze bottle or small piping bag and refrigerate while you cook the eggs.

Heat the pan
Place a nonstick or cast-iron skillet over medium heat. Add 1 tsp neutral oil and 1 tbsp unsalted butter. Swirl until butter is melted and starts to foam but not brown (about 1 minute).

Fry the eggs
Crack 2 large eggs into a small bowl one at a time (to avoid shells) then gently slide into the skillet. Reduce heat to medium-low. Sprinkle about 1/2 tsp of the kosher salt and half of the ground black pepper over the eggs. Cook until whites are set and edges are slightly lacy, about 2–3 minutes for runny yolks. For over-easy, carefully flip the eggs with a spatula and cook 15–30 seconds more. For over-medium, cook 45–60 seconds after flipping.

Finish eggs with cheese
When eggs are nearly done (with whites set), sprinkle 1/2 cup shredded sharp cheddar evenly over the eggs in the pan. Cover the skillet with a lid or large bowl for 30–45 seconds to melt the cheese while keeping yolks at desired doneness. Remove from heat.

Plate and top
Carefully transfer the cheesy fried eggs to a plate or serving piece using a wide spatula so the yolks remain intact. Scatter 1/4 cup crispy fried onions over the melted cheddar.

Drizzle ranch
Using the prepared ranch in the squeeze bottle, lightly drizzle the ranch over the eggs and crispy onions in a zigzag or circular pattern to your liking. Use about 1–2 tablespoons total, or to taste.

Season and serve
Finish with a final tiny pinch of flaky salt and a grind of black pepper if desired. Serve immediately while eggs and cheese are warm.
