Turkey & Glaze

    Prepare glaze

    In a small bowl whisk together 1/2 cup hoisin, 1 tablespoon soy sauce, 1 teaspoon rice vinegar, 1 teaspoon sesame oil, 1 tablespoon honey, 1 teaspoon grated ginger and 1 minced garlic clove until smooth and combined.

    Warm and glaze turkey

    Heat 1 teaspoon neutral oil in a skillet over medium heat. Add the thinly sliced cooked turkey in a single layer and warm for 1–2 minutes per side until just heated through (do not overcook). Pour 3/4 of the prepared hoisin glaze into the pan and toss gently with the turkey for 1–2 minutes, coating evenly and allowing the glaze to thicken slightly. Remove from heat and keep warm. Reserve remaining glaze for finishing drizzle.

Spicy Scallion Slaw

    Prep scallions and vegetables

    Trim and thinly slice the scallions, keeping whites and greens slightly separate. Thinly shred 2 cups napa cabbage and julienne or grate 1/2 cup carrot. Chop 1/4 cup cilantro if using.

    Make dressing and toss

    In a bowl whisk together 3 tablespoons mayonnaise, 1 teaspoon sriracha, 1 tablespoon lime juice, 1 teaspoon rice vinegar, 1/2 teaspoon toasted sesame oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add the sliced scallion whites, shredded cabbage, carrot, and cilantro to the dressing and toss until everything is well coated. Taste and adjust seasoning — add more sriracha for heat or lime for acidity. Fold in the scallion greens last to keep color and crunch.

    Chill briefly

    Let the slaw rest in the refrigerator for 10 minutes to meld flavors while you finish the turkey and assemble the lettuce cups.

Assembly & Garnish

    Assemble lettuce cups

    Lay out 8 butter lettuce leaves. Divide the glazed turkey evenly among the leaves (about 2–3 ounces turkey per leaf). Top each portion of turkey with a generous spoonful of spicy scallion slaw.

    Finish and garnish

    Drizzle a small amount of the reserved hoisin glaze (about 1/4 teaspoon per cup) over each assembled cup. Sprinkle crispy fried onions (about 1 tablespoon per cup) and a pinch of toasted sesame seeds on top. If desired, add additional sliced scallion greens or a small squeeze of lime.

    Serve

    Serve immediately while lettuce is crisp and turkey is warm. Provide extra hoisin glaze and sriracha on the side for guests who want more sauce or heat.
