Muddle strawberries and mint

Hull and quarter 8 fresh strawberries. Place strawberries and 8–10 fresh mint leaves in a cocktail shaker or mixing glass. Add 1 tablespoon simple syrup and 1/2 tablespoon fresh lime juice.

Gently muddle the strawberries and mint together: press down and twist the muddler 6–8 times until strawberries are broken down and mint releases aroma but not completely pulverized (to avoid bitterness).

Strain (optional): If you prefer a smoother spritz, double-strain the muddled mixture through a fine mesh strainer into a small pitcher, pressing on solids to extract juices. If you like more texture, leave pulp in.

Prepare glass: Fill a wine glass or large rocks glass with about 1 cup of ice cubes.

Add base: Pour the muddled strawberry-mint mixture (about 2–3 oz of liquid) over the ice.

Top with Prosecco: Slowly pour 6 oz chilled Prosecco into the glass to preserve bubbles. If you want a lighter, lower-alcohol spritz, add 1 oz chilled club soda before or after the Prosecco.

Gently stir: Use a bar spoon to gently stir once or twice to integrate the layers without flattening the sparkling wine.

Garnish and serve: Add 2 thin strawberry slices to the rim or float them on top and tuck 1 mint sprig into the drink for aroma. Serve immediately while cold and fizzy.
