Rinse and Cook Quinoa

Rinse 1 cup quinoa in a fine-mesh sieve under cold running water until water runs clear to remove bitterness. Combine rinsed quinoa, 2 cups water and 1 tsp salt in a medium saucepan. Bring to a boil over medium-high heat, then reduce to a low simmer, cover, and cook 15 minutes or until water is absorbed and quinoa is tender.

Steam Rest

Remove pan from heat, keep covered, and let sit 5 minutes to steam. Fluff quinoa gently with a fork.

Incorporate Seeds

While quinoa is still warm, stir in 2 tbsp chia seeds and 3 tbsp mixed toasted seeds until distributed evenly. The chia will hydrate slightly from the residual heat, creating a creamier texture.

Taste and adjust seasoning: add a pinch more salt if desired.

Fruit & Toppings

Prepare fruit: wash and dry fruit. Dice or slice 1 cup seasonal fruit and slice the optional banana if using. If using apples or pears, toss briefly with a squeeze of lemon to prevent browning.

Assemble toppings: place fruit in a small bowl and drizzle with 1 tbsp honey or maple syrup if you prefer a sweeter bowl. Chop and lightly toast 2 tbsp nuts in a dry skillet over medium heat 2–3 minutes until fragrant, then cool.

Dairy & Milk Side

Portion dairy sides: spoon 1 cup Arethusa yogurt into a small serving bowl. Pour 1 cup milk into a small pitcher or cup to serve alongside the seed & grain bowl so diners can add milk to taste.

If you prefer, gently fold 1/2 cup of the yogurt into the warm quinoa for a creamier porridge-style bowl, reserving the rest of the yogurt and milk as sides.

Finishing & Serving

Build the bowl: divide the warm quinoa and seed mixture between 2 bowls (about 1/2 cup cooked quinoa per serving as base; see servings). Top each bowl with the prepared seasonal fruit and banana slices (if using).

Garnish and flavor: sprinkle toasted nuts and additional mixed seeds over each bowl, then add 1 tsp lemon zest and a light dusting of 1 tsp ground cinnamon (split between bowls). Add mint leaves for garnish if desired.

Serve immediately with the Arethusa yogurt and milk on the side so each person can spoon yogurt over the bowl or pour a little milk to loosen the grains. Offer extra honey or maple syrup at the table.
