Brew and chill tea (advance)

Brew a mild white tea using 1 tea bag (or 2 g loose leaf) per 8 oz hot water for 3 minutes. Remove tea bag/leaves and let cool to room temperature, then refrigerate until chilled. Measure 6 oz chilled white tea for each cocktail.

Mix

Fill a shaker halfway with ice. Add 6 oz chilled white tea, 1.5 oz peach schnapps, 1 oz vanilla vodka, 0.5 oz fresh lemon juice and 0.25 oz simple syrup (use only if you prefer sweeter).

Shake

Cap the shaker and shake vigorously for 8–10 seconds until the outside of the shaker feels cold (this chills and slightly dilutes the mix).

Assemble

Fill a Collins or highball glass with fresh ice (about 1 cup). Strain the shaken mixture into the glass.

Top

Top the drink with 2 oz citrus soda (lemon-lime) to add effervescence. Gently stir once with a bar spoon to integrate the soda without flattening it.

Garnish & Serve

Garnish the rim or float a thin peach slice and a lemon wheel on top of the drink. Slap the mint sprig between your palms to release aromatics and tuck it into the glass.

Serve immediately with a straw. Estimated temperature: chilled; enjoy during happy hour.
