Mix dry ingredients
In a small bowl or measuring cup, whisk together 1 cup all-purpose flour, 1 tsp granulated sugar, 1 tsp baking powder, and a pinch of salt until evenly combined.
Combine wet ingredients
In a second small bowl, beat 1 large egg lightly. Add 3 tablespoons milk, 1 tsp melted butter or oil, and 1 tsp vanilla extract if using. Whisk until uniform.
Make smooth batter
Pour the wet ingredients into the dry. Gently stir with a spatula or spoon until just combined. The batter should be thick but pourable; a few small lumps are okay. If batter is too thick, add up to 1 tablespoon additional milk and stir once.
Cook & Serve
Preheat pan
Place a nonstick skillet or small frying pan on the stove over medium heat. Allow it to heat for 2–3 minutes. Test temperature by sprinkling a few drops of water — they should sizzle and evaporate.
Cook the pancake
Pour the entire batter into the center of the hot pan. Cook undisturbed for 2–3 minutes, until bubbles form across the surface and edges look set. Reduce heat to medium-low if browning too quickly. Flip with a spatula and cook 1–2 minutes more, until golden and cooked through. Internal texture should be springy.
Serve
Transfer the cooked pancake to a plate. Top with about 1 tablespoon maple syrup or your preferred toppings (butter, fruit, jam). Serve immediately while warm.
