Method
Classic Foxon Park Cola (Makes 1 liter)
Assemble Cola
Fill a 1-liter pitcher with 1 liter of chilled carbonated water. Add 240 ml of cola syrup concentrate and gently stir once or twice with a long spoon to combine, taking care not to flatten the carbonation. Taste and adjust: add an extra tablespoon (15 ml) cola syrup if you prefer sweeter/stronger, or a splash more carbonated water to lighten.
Serve immediately over ice: place ice cubes into tall glasses, pour the mixed cola over ice, and garnish each glass with a fresh lemon wedge to brighten the flavor.
Foxon Park Orange (Makes 1 liter)
Assemble Orange Soda
In a 1-liter pitcher combine 1 liter chilled carbonated water with 200 ml orange soda syrup or orange concentrate. Stir gently once or twice to blend without losing bubbles.
Pour over ice: add ice cubes to glasses, pour the orange soda, and garnish with fresh orange slices. Adjust sweetness by adding up to 30 ml more syrup if desired.
Foxon Park Grape (Makes 1 liter)
Assemble Grape Soda
Combine 1 liter chilled carbonated water with 200 ml grape syrup or concord grape concentrate in a pitcher. Gently stir to combine. Taste and add a squeeze of fresh lemon if you want a brighter finish.
Serve over ice and enjoy. Use lemon wedge garnish if used for acidity balance.
Homemade Cola Syrup (Makes ~500 ml)
Make Cola Base
In a small saucepan combine 240 ml water, 220 g brown sugar, and 60 g granulated sugar. Warm over medium heat, stirring until the sugars fully dissolve. Bring to a gentle simmer for 5 minutes to concentrate, then reduce heat to low.
Remove from heat and stir in 2 tbsp fresh lemon juice, 1 tbsp fresh lime juice, 1 tsp vanilla extract, 1 tsp ground cinnamon, a pinch of freshly grated nutmeg, 1 tsp orange zest, and 1 tsp citric acid. Stir until combined. Add 1 tsp caramel color if you want a darker soda color. Taste and adjust acidity or sweetness: add a little more citric acid or citrus juice if too sweet.
Cool to room temperature, then transfer to a sterilized jar and refrigerate. Syrup will keep up to 2 weeks refrigerated.
Homemade Orange Syrup (Makes ~500 ml)
Make Orange Syrup
Combine 240 ml fresh orange juice, 220 g sugar and 1 tbsp orange zest in a saucepan. Warm gently over medium heat and stir until sugar dissolves. Bring to a gentle simmer and cook 4–6 minutes until slightly thickened (it will thicken more when chilled).
Stir in 1 tsp citric acid and 1 tbsp fresh lemon juice to balance sweetness. Cool completely, strain if you prefer a clear syrup, then bottle and refrigerate up to 2 weeks.
